They use a wide variety of chillies, from milder options to the world's hottest, including Capsicums, Jalapeno, Serrano, Aji Lemon, Asian Fire, Birds Eye, Rocoto Red, Caribbean Habanero, Giant Red Habanero, Scotch Bonnet, Apricot Ghost, Peach Ghost, Trinidad Scorpion, Chocolate Reaper, and Carolina Reaper.
