Wholly Bagels & Pizza began in 1998 when a baker from Washington, USA, moved to Wellington, New Zealand, and opened the first Wholly Bagels. The company emphasizes its love for bagels and a philosophy of doing what you love. They attribute the origin of bagels to a Jewish baker in 1683 who baked 'burgels' (German for stirrup) for the Polish King, a method Wholly Bagels stores continue to use.
